Certified Biodynamic Chenin Blanc, Pinot Noir Located in the heart of Downtown Eugene, Civic Winery & Wines is a multi-faceted project housed in a newly renovated historic building. It's a fully-functioning winery specializing in amphora fermentation, with a wine bar, bottle shop and event space. Organic & Biodynamic grape growing, they use Oregon crafted terra-cotta amphora for wine production. Fermented separately, the PInot Noir spontaneously fermented in amphora and the Chenin Blanc in a concrete egg. After primary fermentation, they were blended in tank and racked off the fine lees and chilled to halt fermentation.
