Fermentation in temperature controlled steel tanks. Aged 4-5 months in tonneaux and then 2-months in bottle before release.
Palikos is a youthful, fruit driven wine that has a pleasing rustic crunch. Thanks to the particular micro-climatic, typical of the southern tip of Calabria, it is possible to produce a simple red wine, available at a great price, that still provides character and a sense of place. A warm red with dark fruit notes, lightly tannic, balanced acidity.
Food pairings: Pesce stocco, spicy white meats or medium-aged cheeses.
Red 2 – 2023 Calstar Cellars 'Za Za Zin' Old Vine Zinfandel, Lodi, California

Stokes Vineyard consistently impresses with its rich and intense old-vine Zinfandel. The combination of vineyard management and the site’s unique character brings out this grape’s richness, intensity, and subtle spice notes.
Aromas of juicy blackberries and rich, dark cherries take center stage, complemented by a delicate intertwining of vanilla and anise, which hints at the judicious use of oak. As the wine graces the palate, it unravels in layers of lush, ripe fruit. This vintage rekindles the varietal’s signature boldness, with each sip revealing a subtle backdrop of pepper spice and a gentle reminder of the vineyard’s earthy terroir.

White 1 – 2023 Escudo Rojo Reserva Sauvignon Blanc, Valle de Casablanca, Chile

Escudo Rojo is the Spanish translation of the German “Rote Schild” meaning Red Shield. In 1999, the encounter between Chilean soil and Bordeaux expertise gave rise to Escudo Rojo, a branded wine worthy of the Baron Philippe de Rothschild name, synonymous with the high standards of a great winemaking tradition.
Powerful citrus fruit aromas, followed by delicate notes of white blossom and tropical fruit. The refined and fresh attack reveals subtle notes of white blossom and guava, leading into an intense and dense midpalate marked by an explosion of citrus fruit flavors. White blossom flavors return on the elegantly mineral finish.
Food pairings: Linguine alle vongole (linguine with clams) or any other garlicky seafood dish
White 2 – 2022 Chateau la Mothe du Barry Blanc, Entre-deux-Mers, Bordeaux, France

Winemaker Notes: "Aromas include lime, white grapefruit, white flowers, gardenia, and camellia. Flavors include white grapefruit, Meyer Lemon, white peaches, and hints of pear. There is a medium to full body which is fully saturated across the palate, good balance and acidity, and a refreshing full finish."
Food pairings: Many dishes from crab and ceviche to pork chops, chile verde and vegetable salads.

Red 1 – 2022 Cerbaia Rosso di Montalcino, Montalcino, Italy
100% Sangiovese
Cerbaia is a boutique winery dedicated to producing wines from some of the finest vineyards in Montalcino. Its Brunello is the true expression of a unique and distinctive place. The Cerbaia property has belonged to the Pellegrini family since the 1950s, with the family beginning to make wine in the 1970’s. Located on the highly regarded Montosoli Hill, one of the most famous cru of the area.
Winemaker Notes: Cerbaia Rosso di Montalcino is a younger wine that combines the structure of Sangiovese with particular fruitfulness and freshness.
Food pairings: Rich pasta dishes, tomato sauces, stews and mushroom sauces

Château Gassier is located a few kilometres from the city of a thousand fountains, Aix-en-Provence, and bears the values of the French Riviera and the Provencal Art de Vivre. The vines flourish on an exceptional terroir, at the foot of the Sainte- Victoire mountain. The light of the Provencal sun, the breeze of the Mistral, the song of the cicadas, so many sensations and images that await the hiker in Sainte-Victoire. The cuvée Le Pas du Moine is part of this landscape and refers to the path once used by the monks.

Pinot 2 – 2021 Joseph Jewell Pinot Noir, Eel River Valley, Humboldt County, California

Winemaker Notes: As the mighty Eel River winds throughout Humboldt, it experiences the nuances of micro-climates from the mountains to the coast. Pockets of warmth, steep ridges, rocky slopes, cool valleys, and coastal fog provide unique vineyard areas. The 2021 is a luxurious blend of five vineyards, Ryan, Alderpoint, Miller Creek, Fruitland Ridge, and Phelps.
Immediate aromas of fresh red fruits like cherry, plum, bramble, cranberry and raspberry leans into darker fruits of black cherry and ripe plum and give way to muted tones of forest bark and dried autumn leaves. The soft pallet releases an intensity bolder than at first sip. Concentrated red fruits seem to dominate the experience with a medium finish which grips your palette and attention before gently releasing you to enjoy its grippy, spicy tannins.
Food pairings: Duck, salmon, mushroom and truffle dishes

Red 1 – 2021 Cingles Blaus 'Octubre' Negre, Montsant, Spain

Cingles Blaus means "blue cliffs" in Catalan and describes the sheer cliffs of blue slate in the area which are a significant contributor to the full flavors of Montsant wines. This wine show the talents of the winemaker in fully understanding the potential of the grapes grown in this terrain.
Aromas include dark cherries, dark plums, blackberries, boysenberries, blueberries, red peaches, and roses. Flavors include blackberries, dark cherries, boysenberries, dark plums, blueberries, and nectarines. There is a medium to full body, perfect balance and acidity, and a long medium to full finish.
Food pairings: Steaks and lamb, grilled sausages, curries, tandoori dishes
Red 2 – 2016 Pierini e Brugi 'Sugherettaio' Montecucco Rosso Riserva

Winemaker Notes: The Sugherettaio is the premium cuvée from the Pierini & Brugi winery, consisting of the Sangiovese, Merlot and Cabernet Sauvignon grape varieties. It has the DOC Montecucco Riserva, which is the southwestern neighbor of Brunello di Montalcino. After being harvested by hand, the grapes for the Sugherettaio are slowly fermented in steel tanks, then it is aged in tonneaux (500L barrels) made of Slavonian oak. During the 24-month aging process, batonnage and stirring of the yeast sediment are carried out regularly to give the wine a maximum of aromatic substances. After aging, it is bottled unfiltered and stored in the bottle for a further six months before being released for sale.
The bouquet is open and intense, reminiscent of cherries, vanilla, tobacco and a hint of rum. Grippy on the palate, ripe tannins.
Food pairings: Game, red meat, braised dishes and mature cheese.
White – 2021 Quinta do Pôpa Reserva White, Douro, Portugal

Founded in 2003, and located in the heart of the Douro Valley, in the hot and dry Cima- Corgo subregion, Quinta do Pôpa is product of lifelong dreams, perseverance, and the dedication of a father who placed both his children’s feet on the Douro, keen to involve them in a desire to produce excellent wines under Pôpa’s signature.
Aged 50% in stainless steel vats. 50% in French oak barrels on fine lees, for 9 to 10 months. In the mouth, it is fresh, pure and has high acidity and a long, salty finish.
Food pairings: Young Douro whites are great with grilled fish dishes. Shellfish also pairs well, such as stone crab, mussels and clams

90% direct pressed Lagrein and 10% 3 day skin contact Schiava. Hand harvested in volcanic soils, fermented with the frozen grape musts before bottling with no filtration. Drinking more like a light sparkling red, with pomegranate, cherries, mountain minerals and herbs, really refreshing.

Dominio de Anza is the project of Diego Magaña in El Bierzo. Diego is a young Navarrese brought up in a family with a long winemaking tradition, Bodegas Viña Magaña. He has also gained experience in Bordeaux, Burgundy, Argentina and Chile
"The 2021 Dominio de Anza Selección de Parcelas goes back to the elegance, perfume and refinement of the wines from 2018 and 2019—floral and clean. It comes from multiple places in different villages, all vinified separately in a year he found to be marked by the rain during the harvest. This has very good freshness. Winemaker Notes: Our winery’s flagship wine. The grapes for our vineyard-selected Furmint come from the Hatalos vineyard, the largest contiguous area of our family estate. The grapes are carefully selected, hand-picked, gently pressed, then aged for at least 6 months in Hungarian oak barrels. This serious body wine with great acid backbone has fruit aromas and grapefruit, green apple and peach along with a touch of herb and minerality in the mouth.
Food pairings: Roasts, poultry and seafood dishes as well as with mature cheeses and hams
