Wednesday (3/8)- Cuatro Dias Wine Co.
Greg Allen is the owner and winemaker of Cuatro Dias Winery. He was born and raised in Torrance, CA. Greg has taken classes through UC Davis Oenology programs and has assisted in the winemaking process at the historical San Antonio Winery in LA. Since working in Paso Robles, he has cultivated his own Cuatro Dias style …typically wines that are richly concentrated in varietal character and strong in color & body without being overripe.
Why Cuatro Dias? When Greg started making wine, he was also busy with his primary career as a Firefighter/Paramedic for the city of Redondo Beach. Usually, the firefighter’s schedule is 2 24-hour shifts, then 4 days off … hence the name Cuatro Dias, or the most time he could devote to his passion of winemaking at the time.
Greg saved up his vacation time and also traded time in order to be off during harvest each year. Almost all aspects of harvest must be condensed into eight week period … which includes harvesting, crushing, fermentation, and barreling, requiring 12 to 16-hour days & 7 days/week. Cuatro Dias works out of Nunno Wine Service Winery, just north of the Paso Robles near San Miguel. Greg has to travel there all year in order to continue wine quality, bottling, and barrel work.
Many of his wines are vineyard specific, he carefully selects from single vineyards and Greg has been making wine for over 10 years now, using various combinations of French, American & Hungarian oak.
