ChtParadisCasseuil Bordeaux

Red 1 – 2019 Chateau Paradis Casseuil Bordeaux, France
70% Merlot, 27% Cabernet Sauvignon, 3% Cabernet Franc

A part of the Barons de Rothschild Lafite brand, this winery is located in the Entre-deux-Mers between the Dordogne and Gironde rivers. Made in the traditional method, only 60% of the blend is wooded, in order to achieve its exceptional balance between elegance and fruitiness.

There is lovely ripe fruit on the nose, dominated by aromas of black fruit like blackberries and Morello cherries, along with very discreet roasted notes. Full-bodied, supple and crunchy on the palate, it has a silky tannic structure and attractive elegance on the finish.

Food pairings: Burgers, meatloaf, roast chicken, mild cheeses.

StephenRoss_Edna_Pinot

Red 2 – 2018 Stephen Ross Pinot Noir, Edna Valley, California
100% Pinot Noir

"Deep, dark and sharp aromas of black raspberry and crumpled lavender are coated in a slate-like minerality on the nose of this appellation blend. The purple - lower focus is pure and intense on the palate, where a bright acidity opens toward cinnamon and vanilla on the finish." – Matt Kettman, Wine Enthusiast (93 Points)

Food pairings: Pulled pork, grilled salmon and tacos

AltaColina_DownslopeRed

Red 1 – 2020 Alta Colina Downslope Red, Adelaida District, Paso Robles
53% Grenache, 30% Mourvedre, 17% Syrah

This women owned winery is best known for it's bold and balanced Rhone varietals. Located on a high hill, or 'alta colina' in Spanish, on Paso's westside, they also offer a vintage trailer campsite in the estate vineyard called the Trailer Pond.

Winemaker Notes:
"Like the rest of our lineup, our Downslope wines are a wonderful reflection of our mountainous site.  We farm incredibly steep hillsides in Paso Robles.  The vines at the lowest-altitude sections of those slopes, where the soil is deeper and more fertile, make a different style of wine than the vines grown everywhere else.  Those fertile soils mean less stressed vines, which create approachable and ready-to-drink wines.  Our Downslope White and Red are grown to enjoy now."

Food Pairing: Cheeses, charcuterie, Sausage & Peppers, BBQ

PeakeRanch_BellisNoir

Red 2 – 2020 Peake Ranch Bellis Noir Red Blend, Sta. Rita Hills, Santa Barbara
52% Grenache, 44% Syrah, 4% Pinot Noir

Located on the eastern end of the Sta. Rita Hills AVA on Santa Rosa Road, Peake Ranch is a 105-acre parcel with 50 acres of vines. The plantings include seven different clones of Pinot Noir, three clones of Chardonnay and two each of Syrah and Grenache. The plantings are all along a hill that covers most of the ranch.

While most of these styles of blends intend to embolden their Grenache by adding Syrah or Mourvedre, the Bellis Noir takes the opposite approach. The cool climate Syrahs carry a lot of intensity both in aromatics and body so Grenache and Pinot Noir are added to round and soften the Syrah to create a wine that has beautiful texture and flavor. 94 PTS - WINE ENTHUSIAST

Food Pairing: Cheese, charcuterie, smoked or grilled meats, grilled veggies
